Toasted Pumpkin Seed Vinaigrette

This vinaigrette goes really well with butter lettuce and radicchio, thinly sliced red onion, sliced pears or apple, and candied pecans or walnuts.  You can often find pumpkin seeds in the bulk food section, and you can buy the candied nuts in the section where you find popcorn.

Serves 6

1/2 cup apple cider
2 tablespoons pumpkin purée
4 tablespoons pumpkin seeds, toasted
1/4 cup rice wine vinegar or apple cider vinegar
3/4 cup olive oil
Salt and freshly ground black pepper to taste

 

To make the vinaigrette: Combine the cider, pumpkin purée, pumpkin seeds, vinegar and olive oil in a blender or food processor and purée until smooth. Season with salt and freshly ground pepper and set aside.
