Serves 4
This rice is delicious. Don’t omit the lime or you can substitute a lemon because it really adds to the overall flavor. Grilled shrimp, or chicken go great with this side dish.
3 tablespoons shredded coconut
1 tablespoon olive oil
1 cup jasmine rice
1 cup chicken broth
1 cup coconut milk
salt and pepper
2 slices lime or lemon
˝ cup frozen peas – optional
In a medium saucepan, add the coconut and toast over medium high heat until lightly browned. Remove and set aside.
Add the olive oil to pan and heat over medium high heat. Add the rice and sauté for 2-3 minutes. Add broth, coconut milk, salt, and pepper and bring to a boil. Add the lime or lemon slice and cover. Turn heat down to low and cook for 15 minutes. Add frozen peas and lightly stir. Remove from heat. Fluff rice. Cover rice and let stand for 5 minutes before serving.
