Three Bean Salad

A classic summertime salad when you can find the freshest beans from the farmers market. 

Serves 6

 

1 cup red wine vinegar

¾ cup sugar

½ cup oil

2 garlic cloves

salt and pepper

8 oz. green beans

8 oz. yellow wax beans

1 15 oz. can kidney beans

½ red onion, chopped

¼ cup parsley

 

In a saucepan over medium high heat, simmer vinegar, sugar, oil, garlic, salt, and pepper for about 5 minutes.  Remove and allow to cool.

 

Blanch fresh beans in salted boiling water, and place in ice bath to stop cooking process.

 

In a bowl, add beans and vinegar mixture, onion, and parsley and toss.  Refrigerate overnight.  To serve, allow salad to come to room temperature.
