Tacos
Use ground turkey for a healthy option to ground beef. Making tacos from scratch takes no more time than using a package, and it has so much more flavor and does not contain MSG like some packages spices.
Serves 6
2 teaspoons olive oil
1 small onion, chopped
½ small jalapeno, seeded and finely chopped (optional if you like it hot)
1 pound ground beef or turkey
2 garlic cloves
salt and pepper
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon oregano
¼ teaspoon cayenne
1 cup tomato sauce
½ cup chicken broth
2 teaspoons brown sugar
2 teaspoons vinegar
Taco shells
In a large skillet, add oil over medium high heat. Add onion and sauté until lightly browned. Add jalapeno (optional). Add beef or turkey and salt and pepper and cook until lightly brown. If there is too much liquid that accumulates, use a baster and remove liquid. Continue cooking until lightly browned. Add garlic and all the spices and cook 1 minute. Add remaining ingredients and cook over medium low heat for 20 minutes or until the liquid has cooked out. Taste for seasoning.
Serve in heated taco shells with:
Grated cheese
Green onions, chopped
Black olives
Sour cream
Tomatoes, chopped
Lettuce, chopped
