Sweet and Sour Red Cabbage

This red cabbage dish is wonderful with its delicate balance of sweet and sour.  You can make it the day before and reheat before serving.  It is wonderful with roasted meats, especially Beef Rouladen.

Serves 6

 

 

2 tablespoons olive oil
1 onion thinly sliced
1 head red cabbage, thinly sliced
½ cup red wine vinegar

1 tablespoon balsamic vinegar
2 tablespoons frozen apple juice concentrate
¼ cup sugar
1 cinnamon stick
¼ teaspoon ground cloves
1 bay leaf
salt and pepper
¼ cup cranberry sauce (optional)

In a large saucepan over medium heat, add olive oil and onions.  Cook until lightly browned, about 15 minutes. 

Add remaining ingredients, and cook over medium low heat, stirring often for 45 minutes to an hour.  The cabbage should be cooked will but still have a slight crunch. Taste for seasoning and adjust seasoning to balance the vinegar, sugar, and spices for a balanced flavor.
