Sugar Cookies

This is my favorite recipe for soft sugar cookies.  I make them at Christmas, Valentine’s Day, Easter, and Halloween.  This recipe easily doubles for a large batch (around 60 cookies), or you can freeze the other half for future use.  I frost the cookies with a buttercream frosting.  The cookies also freeze really well after they have been baked.

1½ cups powdered sugar

1 cup butter, room temperature

1 egg, room temperature

2 teaspoons vanilla

2 ½ cups flour

1 teaspoon baking soda

1 teaspoon cream tartar

1 teaspoon salt

In a large mixing bowl add butter and sugar and mix until combined. Add egg and vanilla and mix well. Add flour, soda, tartar, and salt and mix well. Put plastc wrap over bowl and refrigerate for an hour.

Roll out on a floured surface cookie dough, and use cookie cutters and place on cookie tray.  Bake for 9 min. or until lightly browned. Remove to a cooling rack or wax paper on the counter.
