Sloppy Joes
A grade school favorite and you can double the recipe and keep the other half in the freezer for another day. Broil the split hamburger buns on a cookie tray in the oven.
Serves 6
2 tablespoons olive oil
1 onion chopped
½ red pepper, chopped
1 stalk of celery, chopped
2 pounds of ground beef
Salt and pepper
3 cloves of garlic, crushed
¼ cup white or red wine
28 ounce can of tomato sauce
2 tablespoons of molasses
1 tablespoon balsamic vinegar
6 hamburger buns, split
In a large saucepan over medium high heat, add oil. Add onion and sauté for 4 minutes. Add red pepper and celery and sauté for 4 minutes. Add ground beef and cook until all the meat is cooked through. Use a turkey baster to remove the oil that accumulates. It also allows the meat to brown and removes excess fat from the dish. Add garlic and sauté 30 seconds. Add wine and cook 2 minutes. Add remaining ingredients and cook over medium heat for 20-30 minutes. Taste for seasoning.
