Sea Bass or Halibut with Ginger-Soy Glaze

Serves 4

 

Marinade:

2 tablespoons ginger, chopped

1 teaspoon jalapeno, chopped

2 cloves garlic, chopped

2 tablespoons sesame oil

 

2 ½ -3 pounds sea bass or halibut cut into single portions

 

¼ cup sugar

¼ cup soy sauce

¼ cup rice vinegar

3 tablespoons ginger, minced

2 tablespoons tomato paste

 

¼ cup scallions, very thinly sliced

 

Blend marinade ingredients in a blender or food processor. Place filets in single layer in glass baking dish. Pour marinade over filets, turning once to coat. Cover and Refrigerate for 1 to 2 hours.

 

Preheat oven to 400°.

 

Pour off marinade into frying pan and heat over medium- high heat. When hot, sear filets until golden brown, turning once to sear other side. Transfer back to baking dish.

 

Bake fish 15-25 minutes, depending on thickness.

 

While fish is baking, make sauce: Add all other ingredients, except scallions, to frying pan. Cook until glossy and slightly thickened. Add scallions, reserving a bit for garnish.
