Roasted Zucchini with Balsamic Vinegar and Parmesan Cheese

Simple and delicious with no effort!  A great side dish.

Serves 6

 

 

3 zucchini (you can use a combination of yellow and green), sliced ¼ -inch thick

spray oil

salt and pepper

2 tablespoons Balsamic vinegar

3 tablespoons grated Parmesan cheese

 

Preheat oven to 425 degrees.

 

On a large cookie tray or 2 smaller ones, lightly spray with oil.  Add zucchini slices, salt and pepper, and toss.  Lightly spray with more olive oil.  Place in oven and roast for 5 minutes.  Turn zucchini over and place back in oven for 3 minutes.  Remove, and sprinkle vinegar over zucchini.  Place back in oven for 4 more minutes or until lightly browned.  Remove from oven and sprinkle cheese over zucchini.  Place back in oven and roast for 3-4 minutes or until lightly browned.  Remove and serve.
