Roasted Green Beans with Sun Dried Tomatoes, Goat Cheese, and Olives

Serves 4

 

1 pound green beans, stem ends cut

1 tablespoon olive oil

salt and pepper

1 teaspoon olive oil

1 tablespoon lemon juice

½ cup drained, oil packed sun dried tomatoes, chopped

½ cup kalamata olives, chopped

2 teaspoon fresh oregano, chopped, or 1 teaspoon dried oregano

½ cup goat cheese, crumbled

 

Preheat oven to 450.

 

Line a cookie sheet with foil and crimp edges (for easier clean up).  Place beans on foil and toss with oil, salt, and pepper.  Place on bottom rack in the oven and roast for 15-18 minutes or until wrinkled and lightly browned. 

 

While beans roast:  In a small bowl, add 1 teaspoon olive oil, lemon juice, sun dried tomatoes, olives,  and oregano. Mix well and set aside.

 

When beans are roasted, remove from oven and toss sun dried tomato sauce and mix with tongs.  Place in serving bowl and sprinkle goat cheese and serve.
