Oatmeal Cookies

These cookies are wonderfully soft and chewy and the dried cranberries add a nice flavor.

 

Makes 2 ½ dozen

 

12 tablespoons (1 ½ sticks) butter, room temperature

1 ½ cup dark brown sugar

1 egg, room temperature

2 teaspoons vanilla

1 ¼ cup flour

¾ teaspoons baking powder

½ teaspoon salt

½ teaspoon baking soda

1 ¼ cup old fashioned rolled oats

1 cup of pecans or walnuts, chopped

1 cup dried cranberries or dried cherries

¾ cup chocolate chips

 

Oven at 350 degrees.

 

In a mixing bowl, add butter and cream until smooth.  Add brown sugar and cream until light and fluffy, about 2 minutes.  Add egg and vanilla, and mix until creamy, about 1 minute.  Add flour, baking powder, salt, and baking soda, and mix until well incorporated.  Add oats, nuts, cranberries, and chocolate chips, and mix until well incorporated.

 

On a cookie tray lined with a silpat liner or parchment paper, use a cookie scoop and scoop cookies onto tray.  Bake for 10 minutes.  Do not overcook.  The cookie should be soft in the center and still look a little wet and very light brown.  Remove from the oven and let sit for 3-4 minutes.  With a spatula, remove to waxed paper and allow to cool.
