An easy way to jazz up eggplant and
grill on the BBQ or roast in the oven.
Serves 6
3 tablespoons miso
1 tablespoon honey
2 tablespoon sake
2 tablespoon water
1/4 cup orange juice
1/4 cup lime juice
1 tablespoon finely chopped fresh ginger
4 Japanese eggplant, sliced lengthwise
Salt and freshly ground pepper
Combine all ingredients except eggplant
and salt and pepper in a saucepan and bring to a simmer. Let cool. Preheat
grill. Season eggplant with salt and pepper to taste and brush with miso sauce.
Grill for 3 to 4 minutes on each side, basting with marinade.
