Cowboy Cookies

These cookies seem like a very strange way to make, but they are very chewy and easy to put together.  Great for kids to make on their own.  You can also give them as gifts.  In a clean quart size jar, add all dry ingredients.  On a recipe card write:  In a small microwaveable bowl, add butter and melt.  Allow to cool for a few minutes.  Add vanilla and one egg, and mix together.  Place dry ingredients in a large bowl and butter and mix until incorporated.  Use a cookie scoop, and place on cookie tray.  Bake at 350 for 9-10 minutes, until slightly browned. It makes a really nice personal gift.

 

1 stick of butter

1 egg

2 teaspoons vanilla

 

1 1/3 cup oats

½ cup brown sugar

½ cup sugar

½ cup pecans or walnuts

¾ cup chocolate chips

1 1/3 cup flour

1 teaspoon baking powder

1 teaspoon baking soda

½  teaspoon salt

1 teaspoon cinnamon (optional)

 

Oven at 350 degrees

 

In a small microwaveable bowl, add butter and melt.  Allow to cool for a few minutes.  Add vanilla and one egg, and mix together. 

 

In a mixing bowl, add remaining ingredients and gently mix together.  Add butter mixture and mix until incorporated.

 

Use a cookie scoop, and scoop cookies on cookie tray.  Bake for 9-10 minutes, until slightly browned.  I like to put wax paper on the counter and place the cookies to cool.
