Chicken and Apple-Sage Sausage Patties

You can make these sausage patties the day before, and reheat before serving.

Makes 8 servings

 

 

1 lb. ground chicken or turkey
1 small Golden Delicious or Granny Smith apple, peeled, cored, and shredded (3/4 cup)
2 tablespoons finely chopped fresh sage, or 1 teaspoon dried sage
¼ teaspoon ground allspice
1 teaspoon salt
½ teaspoon black pepper
1 large egg, lightly beaten

 

2 tablespoons olive oil

 

Stir together all ingredients in a large bowl until combined well.

 

Using moistened hands, form rounded 3/4 cups (or any size you like) of sausage mixture into 2-inch-diameter patties and set on a plate lined with plastic wrap.

 

In a large skillet, add olive oil and heat over medium heat.  Add sausage patties in one layer (do not crowd), you might have to make several batches, and cook until lightly browned on one side, about 4 minutes.  Turn, and cook another 4-5 minutes until cooked through.  Serve.

 

Tip:  To make sure you have the right seasoning, you can make a little mini patty and cook it to taste for seasoning before you cook the entire batch.  This is also a good tip if you are making meatloaf and you want to make sure you have the right balance of seasoning before baking it up.
