This is a great side dish for roasted beef and takes 4 minutes to bring together for a colorful and tasty side dish.
Serves 6
1 tablespoon butter or oil
2 baskets of red and yellow cherry tomatoes, washed
Salt and pepper
1 tablespoon fresh chopped dill, or 2 teaspoons dried dill
1-2 cloves crushed garlic (optional)
In a large skillet over medium high heat, add butter or oil. Add tomatoes, salt and pepper and 1 tablespoon of fresh dill or 2 teaspoons dried dill and cook until tomatoes just start to split, about 3-4 minutes. Add garlic and cook 1 minute. Add remaining fresh dill and serve.
