Bubble and Squeak

This is a traditional British dish that uses leftover turkey or roasts, and vegetables.  When you cook all the leftovers in the skillet, you get a wonderful browned bottom that is reminiscent of hash browns.  To serve this dish, you cook the vegetables and serve alongside with sliced turkey, cranberry sauce, and hot gravy.

 

In a large skillet over medium high heat, add butter.  When butter is sizzling, add the leftover mashed potatoes, Brussels sprouts, carrots, and cover the bottom of the pan.  Allow to cook for 4 minutes, and turn mixture with a spatula to allow browning.  Continue cooking and turning the vegetables until there is a nice brown crust that develops, around 10 minutes.  Serve.

 

Meanwhile, place leftover gravy over stovetop or in the microwave and reheat.

 

Place cranberry sauce in a serving bowl.

 

Place sliced turkey on platter.
