Broiled Halibut or Salmon

This recipe works for any fish and takes 1 minute to prepare and 15 minutes to roast.

 

Serves 6

 

Fresh halibut, or any fish

1/4 cup mayonnaise

1 garlic clove

any combination of fresh dill, basil, tarragon, chives, parsley, or oregano (you can also used dried herbs)

salt and pepper

2 teaspoons mustard

zest of half a lemon

2 teaspoons lemon juice

 

Oven at 400 degrees.

 

In a mini food processor, add all ingredients and process until blended.

 

Take a piece of foil that is larger than the piece of fish and crimp around all the sides.  Place on a cookie sheet and place fish on foil.  Spread mayonnaise mixture over fish and place in oven for around 15 minutes, or until fish is opaque throughout and cooked through.  Serve.
