Broiled Flounder, Halibut, or Salmon with Bread Crumb Topping

Serves 4

 

 

1 tablespoon butter or vegetable oil

2 tablespoons finely chopped onion, or green onion
2 tablespoons finely chopped green or red bell pepper

1 stalk celery or fennel, finely diced

2 teaspoons of fresh thyme or oregano, or 1 teaspoon dried

1 garlic clove, minced

salt and pepper to taste
4 tablespoons fine dry bread crumbs (Panko breadcrumbs from the Asian aisle)
4 flounder, salmon, or halibut fillets (each about 6 ounces)
4 tablespoons mayonnaise

 

Preheat oven to 400 degrees.

 

In a heavy skillet over medium high, add butter.  Add onion, bell pepper, celery, thyme, salt, and pepper, and sauté until vegetables are lightly browned.  Add garlic and cook for 1-2 minutes.  Stir in breadcrumbs and salt and pepper to taste.

 

Cut a piece of foil large enough for fish, and crimp edges all around, and place on cookie sheet (for easy cleanup).  Arrange fish skin side down and spread the top with mayonnaise. Sprinkle fish with bread crumb mixture.  Place in oven and cook for about 12-15 minutes, or until flesh is opaque and cooked through and the top is lightly browned.
