Black Bottom Cup Cakes

These are moist and delicious.  From Mary Jo Wilson

 

Makes 18

 

Filling mixture:

Combine following

1 pkg 8oz cream cheese

1 egg

1/3 Cup sugar

1/8 teaspoon salt

 

Chocolate mixture

Mix the following till smooth, not long

1 pkg (6oz) Chocolate chips, or more if desired

1 ½ Cup flour

1 Cup sugar

1 teaspoon soda

½ teaspoon salt

¼ Cup cocoa

1 Cup water

1/3 Cup oil

1 Tablespoon vinegar

1 Teaspoon vanilla

 

Fill paper cups ½ full with chocolate mixture. Drop 1 tablespoon filling on top.

 

Bake at 350 25 -30 min. check at 25 & don’t let get brown on the top of the filling.
